Avocado Toast

I was skeptical when a friend suggested I try avocado on toast; although I do love guacamole, I'm not about to eat it for breakfast... But I got over that and tried it, because I trust her and she knows good food. And oh is this good! Like toast topped with the silkiest, creamiest cream cheese you've ever had, only fresher, lighter, healthier and tastier. Needless to say, I was hooked.

Avocados contain iron, niacin, thiamin, riboflavin, folic acid, vitamins C, E and K  – all the things listed under 'fortified ingredients' on the cereal box... – and more potassium than bananas. They are a rich source of fibre and 'healthy' fats (including oleic acid), indicated in the lowering of blood cholesterol, and have been proven to reduce inflammation associated with cardiovascular disease. Also, something in them will make your skin look flawless. So there's that. If you're feeling fancy you could put a fried egg on top, or maybe add a drizzle of hot sauce, or both, but I prefer mine unadulterated. 

INGREDIENTS

However many slices of 7-seed bread you can manage
Butter or olive oil
Half an avocado for each piece of bread, sliced or mashed
