This is a regular green juice turned up a little bit. The apple keeps it sweet, the ginger gives it some bite, the lime lifts it and disguises the spinach and kale. I peeled, chopped and weighed the ingredients because I wanted to give accurate amounts – I hate when it says 'a handful of...' in a recipe; I have tiny hands, it's going to come out all wrong – but if the produce you have is slightly larger or smaller then it won't affect the result too much. The juice will keep in the fridge for 24 hours, but, as with all fresh juice, it's best enjoyed immediately.
150g Romaine Lettuce
40g Lime Juice
Wash, peel, core, chop, slice and squeeze as appropriate. Pass the ingredients (minus lime juice) through a juicer in the order listed above. Stir in the lime juice. Serve over ice.
