Ultimate Green Juice

This is my go-to green juice. I like to make it fresh every morning, have a glass before breakfast and then keep the rest in the fridge to drink in the afternoon. The ratio of vegetables to fruit is 6:1 so while it won't spike your blood sugar, it does have quite a strong greens taste which takes some getting used to if you're just starting out.

I peeled, chopped and weighed the ingredients because I wanted to give accurate amounts – I hate when it says 'a handful of...' in a recipe; I have tiny hands, it's going to come out all wrong – but if the produce you have is slightly larger or smaller then it won't affect the result too much. Passing the pulp through the juicer a second time ensures you get every last drop.

INGREDIENTS

150g Romaine
100g Spinach
100g Kale
50g Parsley
15g Ginger
120g Apple
300g Cucumber
50ml Lemon Juice

METHOD

1. Wash, peel, core and slice the ingredients as appropriate.

2. Pass everything through a juicer in the order listed above.

3. Decant the pulp into a bowl, stir it, and pass it through the juicer again.

4. Stir the juice and serve immediately.
